Whatever happened to bacon fat? As a kid, bacon was often cooked on a tray in the oven. The delicious fat that collected in the tray was poured over potatoes etc

Today, cheap bacon only gives up water and white scummy stuff, and even"proper" bacon leaves a lot to be desired.

You can't beat a straightforward bacon sandwich with brown sauce of course, but also:

Cabbage and bacon with pasta, served with mozzarella, pine nuts, and a bit of thyme. Nom.

Cheesy bacon pasta is nice.

Also smothered chicken - A chicken breast wrapped in bacon and roasted, served in a creamy garlic and mushroom sauce, chips and veg.

Last night we had pasta with broccoli, a quick sauce of stilton melted into some creme fraiche with crispy bacon - it's yummy and very quick & easy.
