I think I'd struggle to find a local butcher within 50 miles who cures their own bacon!

Streaky is definitely best, but Ayrshire roll is an acceptable compromise.

As kids we used to fight over the bacon rind cut off by my Dad. :)

We used to have a supermarket up the road that sliced their own bacon. They did little packets of off-cuts, mainly streaky. Mum bought loads of them and we used to gorge on bacon butties after the pub. :) They don't make bacon like that any more.

As someone who's not been eating meat for very long, I like my bacon in a sarnie with butter. Unsmoked back 1st choice but also like streaky and smoked. I also make bacon and tomato pancakes. Can post recipe if anyone wants it.

Ayrshire roll (from Scotland Magazine):
