I think I'd struggle to find a local butcher within 50 miles who cures their own bacon!

Streaky is definitely best, but Ayrshire roll is an acceptable compromise.

As kids we used to fight over the bacon rind cut off by my Dad. :)

We used to have a supermarket up the road that sliced their own bacon. They did little packets of off-cuts, mainly streaky. Mum bought loads of them and we used to gorge on bacon butties after the pub. :) They don't make bacon like that any more.

As someone who's not been eating meat for very long, I like my bacon in a sarnie with butter. Unsmoked back 1st choice but also like streaky and smoked. I also make bacon and tomato pancakes. Can post recipe if anyone wants it.

alpenrose, my mum used to get bacon bits from the in-store deli counter when we were kids. Used to love that!

Ayrshire roll (from Scotland Magazine):

"...The other distinctive feature of Ayrshire bacon is the rolling technique to produce ‘Ayrshire Middle,’ often just referred to as simply ‘frying-bacon for breakfast.’ This characteristic rolling means that each slice of bacon ends up with the lean back bacon surrounded by streaky bacon: a succulent round slice with just the right ratio of gleaming white fat to lean meat..."
