Red Ant, I'd like to see that recipe...., yes no middle cut here either, it must be used for something different these days.The butcher in cirencester used to cure his ow, but the ones here don't, I may try it, any favoured cures?

I used to love chewy bacon rind in the days when bacon was proper bacon made out of pig meat instead of wet pink plastic as it is these days.

Bacon and fried egg butties with tomato sauce is a regular feature in our house. Unsmoked, thick cut, back bacon, fried to crispness.
I also really like streaky bacon with American pancakes, fried egg and maple syrup.

For the first time in for ever, we don't have any bacon in. I have to buy selectively now we've downsized the fridge and freezer and we've run out 🙄😲
