I've always bought, eaten and thoroughly enjoyed smoked back but recently I've found to my surprise that streaky is BETTER ... cooks/crisps up quicker and is much tastier.

My mum used to cut it off the rasher before cooking, so I could eat it (raw). I have no idea why she allowed this, it seems like a disaster waiting to happen in retrospect.

(I still do it when I can find rind-on though. It's nice :-))

I keep meaning to try curing my own bacon :-)

I tried making sausages ... it wasn't so successful :-( :-o ... My home made burgers are pretty good though :-)

I cure my own bacon, it's delish! (Luckily I was taught by Steve from River Cottage). For the best bacon if you don't want to make it yourself though always buy it from a good local butcher who makes their own from quality local pork, always better than the nitrate and water filled rubbish you normally get from a supermarket and definitely worth the little bit extra!
