Shifting from Olympic to Sprint triathlon - last minute!

I'm signed up for an Olympic triathlon on Saturday but I am the ONLY person so signed up. There are a few people in the half. I suspect they will cancel the Olympic and ask me if I mind doing the half; and in any case, I would feel bad forcing the volunteers to stand about for 3 hours just for me. However, I am not trained for the sprint and I am not very fast (but have good endurance). Basically, my pace will be more or less the same over the shorter distance which is a bit rubbish.

So.... tips? I've never done a sprint distance but I've done a couple of mini tris.

How can I pick up my pace? And do I need to bother eating anything? If I take a gel and some pocket coffee before the swim and have some water on the bike, will that see me? I ran a half-marathon last month and didn't even stop for water.

To give you an idea, my target for the Olympic would be 2.50 (I was 2.59 when I did the same route 2 years ago, but I crashed the bike and I've also got much better at running since then.) I don't see me finishing the Sprint in much under 1.25, taking into account the transitions.

Just go out and enjoy it, I'm pretty much one-paced myself, so wouldn't try to go a bit faster for a shorter distance.
I would have thought a couple of gels and water water on the bike would be sufficient for a sprint.

Thanks all! Race starts at 10am so new "race plan" is:
9am: sports bar thing (Icelandic - no idea what it is or what it is in it)
9.45am: gel and pocket coffee (google it)
10am: race
T1
Bike: drink some water, according to thirst; if I fancy it around half-way, suck gel which will be in pocket of bike jacket. It's going to be cold, windy AND pissing it down, so I will need to stick a jacket on.)

T2
Run as if there is a rabid Alsatian after me.

Fingers crossed! There are 5 women signed up and 3 men, but one of the women has a degree in sports science and works at a swimming pool. I suspect my butt will be well and duly kicked.

Aiming for 1.20-1.25.

hope the weather is kind to you - my boy tells me they're getting an average of around 6 degrees and he's a bit chilly in his tent
