I've looked at several recipes this morning. They seem to be equally split between bringing things to a boil, which is fair enough, and bringing things to *the* boil, which isn't.

In the latter case, how do I know whether I have brought my pan to the correct boil, please?

Dip your boils in it. If they hurt, it's boiling.

Shakespeare has the answer, follow this recipe:-

Double, double toil and trouble;
Fire burn and caldron bubble.
Fillet of a fenny snake,
In the caldron boil and bake;
Eye of newt and toe of frog,
Wool of bat and tongue of dog,
Adder's fork and blind-worm's sting,
Lizard's leg and howlet's wing,
For a charm of powerful trouble,
Like a hell-broth boil and bubble.

Double, double toil and trouble;
Fire burn and caldron bubble.
Cool it with a baboon's blood,
Then the charm is firm and good.

The ingredients are readily available at most 'good' supermarkets.

If the boiling point of water is 100 then is 'boil/boils' the same as simmer? Still 100 deg surely?

It’s actually rare for water to boil at 100 deg C. A simmer is more like 94 or 95 deg and even a good ‘rolling’ boil is rarely higher than 97 or 98 deg

Boil is a bit like The Led Zeppelin or The Arsenal; ‘the boil’ is correct imho

Also consider the altitude you are boiling at.

Also The Mainly Nationalist Springfield Road.

Not familiar with sticking the definite article in front of Led Zeppelin, but it makes sense. Pink Floyd occasionally attracted a spurious 'the' too. But not, never not no not, Foo Fighters.
