For goodness sake is an idiom, spoken not generally written. If you believe it is in the possessive then yes, it should be goodness's. The difference between it and the previous example is that 'for the sake of completeness' is something that might be written down. If you're going to consist of making it 'for completeness's sake' then that's the way it has to be. However, it's clumsy in the mouth so don't bother.

There are no exceptions to the 's rule for singular possessives, apart from some very obscure custom and practice stuff to do with the names of saints and those rare examples of archaic genitive forms that linger in the language, such as its, his and her.
