Looks amazing jacdaw. So if you were doing yeasted bread, how long are you talking about for fermentation?

Not a really long time; say 5 hours from mixing to going into the oven, if I have no other constraints. If I need to fit in with other things, then an overnight bulk ferment in fridge, plus however long it takes to prove the next day.

I knew somebody baking professionally, using really hot water, no bulk ferment, straight into tins, loads of yeast, into the oven after about an hour. Awful bread, allegedly artusan, but closer to Chorleywood process.

It can be GM - TBH I like the ones I make at home more than the posh ones I can get down the road; it can have a very moist crumb but is invariably much tastier than normal white mass-produced bread.
