sallykate - both Asda and Tesco here have lemons available though I've also read online that you can substitute lemon extract for the zest (I always have bottled lemon juice in).

DT - I have a basic tiffin/rocky road recipe that I adapt - I had dried pineapple, a little crystallised ginger and coconut flakes so they made up the 100g of dried fruit that I add hence 'tropical'.

Isn't all parkin treacle? The recipe I use had black treacle and golden syrup in.

The reason I used the expression ‘treacle parkin’ is there’s an old Yorkshire fly for trout (and grayling) fishing called just that. It’s named after the cake

I’ve caught fish on the treacle parkin but never baked the cake. When I’ve tied it in the past I’ve used a more golden yellow wool for the tag than in the picture linked below
