Don’t underestimate cheddar. If you could only have one cheese, cheddar would be the most versatile all-rounder, as well as a good mature cheddar being one of the finest cheeses you can have.

I've got a rather good French brie, Stilton then some ordinary cheese.
Including cheddar. Yawn.
