mmmm...Gingerbread cake

    -caz-: As some have enquired, here's what I used :-

    2.5 cups of plain flour
    1 cup of white cane sugar not castor or brown
    2 teaspoons of ginger
    2 teaspoons of mixed spice
    2 teaspoons of bicarbonate of soda

    Sieve dry ingredients into a large mixing bowl

    2 desert spoons of syrup
    1/4lb or 100g of margarine

    Add marg & syrup in a saucepan then melt before adding to sieved bowl and mix

    2 eggs
    1 cup of boiling water

    Beat the eggs and mix in bowl then add the water to get a good consistency mix

    Prepare a deep loaf tin, I used a non stick tin smeared with a little marg, depending on your tin you might need to use greaseproof paper to line tin, preventing it sticking.

    Stick in the middle of a preheated oven at 170deg c or gas mark 3 for 90 minutes. Reduce if using fan assisted by approx 10 minutes.
