Must have one in a recipe book somewhere. My mother used to make them, but I never did. Once she made 30, and the family ate the whole lot in one go.

So Welsh Athletics have got Mo to say he is definitely thinking of doing the lots o cash half, did Cardiff University suddenly being mentioned as the race sponsor have anything to do with this? A promise of an honorary doctorate? ;-)

Wow, how can a publicly-funded University stump up the cash when the WAG education (HEFCW) budget is under such pressure.
well the University gave the then Archbishop of Wales soon to become Arch of Canterbury an honorary Doctorate in 2002 so I had to doff my cap to him as well as the then Pro Vice Chancellor Kinnock. I would quite happily have rather doffed to Mo rather than Neil lol My hat was off and on like a light switch to about 8 peeps on the stage that day. Didn't have to do all that first time around in 1983 when I qualified professionally...

Welsh cakes - from a little book called Favourite Welsh recipes - can't find a date on it but measures are in Imperial rather than Metric, so I must have had it a while.

1 lb flour
1 tsp baking powder
1 pinch allspice
1 pinch salt
4 oz. butter
4 oz. lard
7 oz. sugar
4 oz. seedless raisins
2 eggs, beaten
milk to mix
caster sugar to sprinkle

Stir together the flour, baking powder, allspice and salt. Rub in the butter and lard. Add the sugar and raisins. Add the beaten eggs to the mixture, plus a little milk, to make a fairly stiff dough. Roll out to a thickness of 1/4 inch and cut into 2" rounds with a pastry cutter. Cook on a greased griddle or heavy based frying pan for about 3 minutes each side until golden brown. Sprinkle with sugar and serve warm.
