Yes...I’d go for that Rosehip.

WL ..those cakes are brilliant.

I picked up 6 duck eggs today. Apparently they are superb for baking..
I’ll let you know.

Duck eggs make fabulous victoria sponges :)

There were some at the Farm shop, but I have plenty of eggs so didn't get any.

I made a fruitcake today (1950s Bero boiled fruit cake recipe). emptied the jar of fruit. Went to fill it and I have no more raisins or sultanas in the cupboard :( - this is a very sad state of affairs, never normally happens and apparently everyone has sold out.
I'm also low on yeast, which is harder to find than loo roll apparently.

Duck eggs make cakes rise beautifully, but can make them a bit rubbery. And there is always that slight whiff of duck.

Better than no cake at all, though.

I love that Be-Ro recipe, Rosehip. My mum must have made hundreds of boiled fruitcakes and I've made a fair few myself!!
