My Garmin stats always give temperature. What is this measuring? It's not air temp, much too high. It was 3°C outside. Body temp? Much too low, that should be 37°.

Here's my stats from my last run:
14.4 °C
Avg Temp
12.0 °C
Min Temp
22.0 °C
Max Temp

Here's my stats from my last indoor training session (much higher):
27.0 °C
Avg Temp
26.0 °C
Min Temp
27.0 °C
Max Temp

Once I know what this is measuring, what do they intend me to do with this information?

It's the internal temperature of the watch. I'd guess it's useful only for swimming. You can probably use it to measure ambient temperature if you put it outside for half an hour or so.

Nope. Useful internally for the watch, the sensor is part of the barometer chip and forms part of its pressure calculation.

Wonder why it displays so prominently on the workouts then.

It's useful if you have a Tempe external sensor, which is more accurate provided you can avoid direct sunlight. Otherwise, who knows? Seems like a "might as well" to me.

Homer! The Herald Angels Sing
Its sort-of handy in the mountains as you get the big drop alerts
