If all the plans come together, Mr Ness and I will fly to a sunny spot on one of the Canary Islands on Xmas day so no turkey will be being purchased for the Ness household. We will be in the hotel in time for the gala dinner, I should think. And there will probably be turkey as an option as part of the buffet. I will probably stick with my Xmas holiday favourite and have lobster instead though. :)

Will do ginger beer gammon in the slow cooker then blast in the oven

Got a venison Lidl thing in the freezer. And will try a brisket in the slow cooker too

Over the last few years we've had venison, duck, beef (plus roast ham and something for the pescatarian), at the request of our children. This year the visiting NZ family have specifically requested turkey so I've ordered a turkey crown, and I'll also get beef for those who don't want turkey, and salmon. Not sure about the ham this year, maybe I'll get it for Boxing Day.

I'm planning on brining the turkey and then cooking it early so that there will be room in the oven for the other stuff as well as the 10,000 roast potatoes. I've never brined before - any advice?

PaulaMc I'd be interested to hear how the turkey brining goes. I read up on it after your post.

I don't have a problem that turkey is dry when I cook it as I always use a roasting bag but I'd still like to try the brining.

When you were talking about "brining" the turkey I thought you meant sealing it in a frying pan but in a posh voice.
