Famous Apple and Date flapjack recipe from RW. Best I've ever tasted, seriously !

225g Butter

225g Sugar

2 tbsp Honey

350g Oats

1tsp Cinnamon

2 eating apples peeled and chopped

200g Chopped dates

Melt butter ,sugar and honey

Stir in oats and cinnamon

Cook apples and dates for 5 mins

Put one layer of oat mixture in tin. one layer of fruit and top with a layer of oats.

Bake 180 degrees C for 30 mins.

Fetch Flapjack
20 x 30 ish cm tin, lined with baking paper
Double the quantities for a softer (thicker) result
100g butter, 75g golden syrup, 75g soft brown sugar (or part Demerara), 225g rolled oats.

Melt butter, sugar & syrup together. Stir in oats well. Gently press into tin. Bake 180*C 25-30mins.
Variations: 1) 2 ripe bananas, mashed, mix well in; 2) mix in handfuls of raisins, chopped dried apricots/dates, seeds etc; 3) in double quantity, layer about a quarter jar of jam in between 2 layers (raspberry/apricot/blackcurrant/plum/mincemeat...)

Thought I'd pop back on here and say a big 'thankyou' to Rosehip. I did turkey steak schnitzels tonight and followed her suggestion of

- flour first
- then egg with a bit of milk
- finally the breadcrumbs

To be 'fancy' I added some ground almond to my breadcrumbs. Mwah. Dee-lish and worked a treat, so thanks Rosehip :-)
