Elkie Brooks, (incredible range e.g. Honky Woman (Vinegar Joe))
Sam Brown, (who sadly due to vocal problems no longer sings)

+1 for Lady Antebellum. If we're going country - Eva Cassidy (pro already mentioned), Alison Krauss. I also like Florence, Freya Ridings, Anna Ternheim, oh gosh, too many to mention. Oh and Loren Alred, wish she'd record some more. Um... loads. Mostly I like female voices full stop. :-) G

Just read back. Nobody had mentioned Eva Cassidy. Wow! Beth Orton, Sarah McLachlan, Bic Runga. And that early Idol winner - Alex Parks. Who was that 13 year old kid with the husky voice who did some fab covers back a few years?
