Hi. Anyone here got a bike with the quick release tyres? Are they easy enough to take off and put back on?

Tyres? Do do mean wheels? If so, yes, they are. You may need to release the brakes first though, to get the tyre past (or deflate the tyre).

Some are a tricky lever system That you have to get handtight and beyond. Which can be tricky to get off.

But I saw a sexy Liv MTB in the woods Last week that was Attached with a different bolt thru kinda system which looked super easy!

Quick Release levers on wheels should come off pretty easily. It's a cam mechanism, so you turn one end cap until vaguely tight, and then flip the lever in to secure the wheel.

There has been a move towards thru-axles with the introduction of disc brakes. The axle comes out of the wheel, and threads into the frame or an external nut. Some have a lever, others need an Allen key. Personally I think they're a retrograde step, but expect they're here to stay.
