I've eaten most of the bigger ones, and I suspect the answer with the smaller ones is either 'not of very much' or 'boney' or both.

(A question to which I know the answer in the cases of pike, carp, zander, trout and salmon. And eels, if they count.)

Perch are supposed to be very tasty, although the bones would be a problem.

I've eaten sturgeon too, but last time I checked there weren't any in the lake at Milton Country Park. :-(
