I've eaten most of the bigger ones, and I suspect the answer with the smaller ones is either 'not of very much' or 'boney' or both.

Perch are supposed to be very tasty, although the bones would be a problem. I've eaten sturgeon too, but last time I checked there weren't any in the lake at Milton Country Park. |
