I use 20-30% wholemeal or seeded flour and add a little extra water, I also make rolls so just use the dough setting. Super easy and tastes great!

Don't think we've ever sieved the flour in 10+ years of having bread machines!

I would never sieve flour for bread!
The recipe is so simple I actually don’t need it any more, just do it from memory. You certainly don’t need sugar in a bread recipe!

I used to hand bake sourdough and love the simplicity, taste & texture from just flour, water and salt!

Was worried the sugar was a necessary evil for machine bread. Finished work for today, off to try that recipe :)

I have a vague recollection that the sugar is meant to make the crust slightly browner by caramelizing on the surface - completely cosmetic.

I read somewhere, can't remember now, that sieving the flour helped with the rise. And I used to do when I had a Panasonic breadmaker years and years ago. Maybe I was wasting my time!

Just eaten some of the nice results from Phleecy's recipe :) maybe a fraction salty for me easily tweaked (used wholemeal program after initial attempt on fast loaf program not quite fully cooked)

Might try the machines "sourdough" recipe & program at the weekend - not a proper sourdough just a longer proving time with less yeast

I only use 1 tsp of dried yeast in my machine (about half a 7g sachet). That seems to be enough and it makes the yeast go twice as far.
