I made this no churn rhubarb ice cream

joskitchenlarder.com

It’s very nice.
I used less sugar with the rhubarb than the recipe says and if (when) I make it again I’ll use more cream and less condensed milk so that it’s a little less sweet.

So is mine. I made this last week. I was going to make a rhubarb and custard cake as well but couldn’t bring myself to have the oven on.

Less sugar will make it less soft. A nip of suitable alcohol will redress the balance.

That answers my question then... So if you want ice cream you can scoop, you need to add more sugar? I was thinking of beating up egg whites with sugar and stir those through the cream/fruit pulp... Then churn it.
