I love some of the variants, though, and I would say Hunters and Gatherers is my favourite of any. (It's a separate standalone game rather than an expansion.)

You get a lot of interesting new tiles and an extra set of meeples in T&B. Makes it interesting to play just by adding the new cards even without the new rules and good for a game with more people. I have the hills and sheep one which is good for a change but I wouldn't say it's essential.
