Derby Tup - I originally took it from Jamie Oliver's Italy book (probably about 15 years old now) which I don't have here. I can't find it online, although his Pollo alla cacciatora uses similar principles.

I don't use a recipe as such these days, but this is what I do and it's dead easy:

I use good quality stewing steak - anything that lends itself to long slow cooking. Loads of garlic - and I mean loads - probably two heads, to about 750g of meat, four or five sprigs of rosemary and LOADS of black pepper. Use far more than you think you should!

The grinding of the pepper and the peeling of the many garlic cloves is what takes the time.

It wasn't in the original recipe but I add a couple of bay leaves and one or two thinly sliced red onions. You can brown the meat but don't need to.

Layer it all in a big casserole dish, pour over water and booze (proportions up to you but wine should be red) bring to the boil, lower to a simmer for five or ten minutes then cover the whole lot with foil and your heavy casserole lid - you don't want steam escaping and stick in the oven on a very low heat for 6 hours or more.

The original recipe said to cook it overnight on Gas mark 2, I do remember that ... and then eat some for brekker with good bread, like an Italian hunstman. Or woman.

My partner doesn't eat meat so I portion it up for myself and freeze.
