Lemon sole with a wine and cream sauce (much less fancy than it sounds), rice and spinach. Spinach is so unrewarding to prepare, isn't it?

I find spinach oddly satisfying - I like seeing it wilt away from leaves into green sloppyness. Maybe it's just me..

It's a boring cheese & tomato pasta bake in the mouse house tonight.
