I'm baking bread today too. Just about to head into the kitchen to mix starter, water, flour and salt. Which flour to use? I had a Shipton Mill delivery earlier in the week so I have several options!

And I have an oval banetton so that I can try to make a loaf with a shape better suited to my toaster.

Oops - not actually baking today, just stretching, folding, shaping and leaving to prove overnight in the fridge. Fresh bread for a late breakfast tomorrow. Decided to finish up the Matthews organic; last time it made a loaf which was a lot softer than the same recipe with bog standard Allinsons.
